This salad is packed with lots of goodness. It has plenty of protein and different textures to delight the tastebuds. I had made a batch of quinoa and a batch of roasted chickpeas, which made assembly super simple.

This salad is a feast for the taste buds. The flavors are amazing. There are so many wonderful textures – crunchy, creamy and a little crisp. Not only do the textures send this salad over the top, but the flavors are sublime.
I made this for a light summer dinner. Dress this salad with my Strawberry Vinaigrette that can be made in the blender in 60 seconds or less and you have a perfect bite of salad.

This is a summer salad dressing if there ever was one. Strawberries, fresh lemon and a few other ingredients bring this strawberry vinaigrette together. I made this dressing to go with the Strawberry Baby Greens Quinoa Salad. The perfect salad to bring to any picnic or barbecue. You will be taking an empty bowl home afterward.
- 1/2 c strawberries, sliced
- 1 lemon, zested, juiced
- 1 tbsp cane sugar
- 2 tsp Dijon mustard
- 2 tbsp water
- pinch of Himalayan salt
- pinch pepper
Combine all ingredients into a high-speed blender. Blitz until smooth. Taste for seasoning. Pour of salad and toss ingredients.
