Today I went for my walk/hike and the only wildlife I saw were two rabbits. I just caught sight of the cotton white tail of the first rabbit and the second one let me take its picture. I have to admit, I am a little disappointed that I did not see more wildlife this walk.
After my walk I refueled with my usual traveling food of oatmeal with berries, almond butter and some plant milk. I promised to share some of my “go to” ideas for lunch when away from home.
As I mentioned in my previous post, I almost always make a grocery run so I know I have food that will meet my dietary needs. On this grocery trip I picked up some salad greens, crunchy sprouts, different kinds of fruit, some frozen veggie patties and some frozen quinoa with veggies.
For lunch I made a small smoothie with some banana, raspberries, strawberries and some plant milk for easier blending. To go with my berry filled smoothie was two veggie patties with avocado and some salad greens, crunchy sprouts and a squeeze of fresh lemon. As you can see with just a little pre-planning you can go anywhere and meet all your dietary needs.
