Peach Cobbler

This recipe I adapted to make it Paleo friendly. The original recipe called for self-rising flour, milk and sugar. Tasty without a doubt, but not very healthy. I knew I would have to change it if I wanted to have this again. The color of the cobbler is richer do to the maple sugar, yet as tasty as the original. Serve with ice cream, whipped cream or whipped coconut cream. Whatever your heart desires.

  • 1 c paleo all-purpose flour (see website)
  • 1 1/2 tsp baking powder
  • 1/4 tsp sea salt
  • 1 c almond milk (see website)
  • 1 tbsp vanilla
  • 1 c maple sugar
  • 1 stick of butter
  • 3 large peaches, cut into 1-inch pieces

In a 13×9 pan put the stick of butter. Place pan in the oven and then turn oven on to 350 degrees. While the oven is coming to temperature the butter is melting.

Meanwhile mix together flour, baking powder, salt, almond milk, vanilla, and coconut sugar. When the butter is completed melted and browned pour batter into pan. Do not stir batter and butter together. Evenly distribute peaches (still do not stir). Bake for 30-45 degrees, until batter is set and golden. Serve. Eat. Enjoy.
